Milk Substitutes

Instead of milk you can use water in most recipes.   You can also use rice milk, soy milk, oat milk, nut milk, and goat milk.  You can buy all these atmost grocery stores now.  You can also make your own rice milk, soy milk, nut milk and oat milk.  To make your own oat milk soak 3/4 - 1 cup of uncooked, flaked oats with 1 cup of water.  Soak for several hours to soften or cook.  Put this mixture in a blender adding 4 cups of water.  Also if desired, add 1 teaspoon of vanilla,  3 Tablespoons of honey, and a pinch of salt.  Blend all of this in on high for 1-2 minutes until oats are well blended.  The oats will not totally disappear.  Now, pour the mixture through a seive into a container.  You will have to stop and mash the mixutre releasing the “milk” and dump out the oat solids to continue.  Now you can use the oat milk as a substitute for milk in a recipe.  This works particularly well for a pudding recipe.  You can use the same recipe substituting cooked rice for rice milk.
