Memorial Day

Please pause to remember the true meaning of this important holiday in our country. It is not about sales and eating, it is about REMEMBERING. Remember the sacrifice and dedication that so many men and women gave for our country to be free. They gave their life, we can give a few moments to give thanks to God through Jesus Christ that they were willing when called. God wants us to remember as is evident in Exodus 13 when he told Moses to institute the Feast of Unleavened Bread as a remembrance of being led out of Egypt. It is also in the New Testament in 2 Peter 3 when Peter encourages the people to remember what was spoken of in previous times. So remember what our fellow citizens have done for us to keep us free.
As you celebrate and remember, enjoy a glass of homemade lemonade! Here is the recipe.

Home Made Lemonade:
In a small saucepan, combine 1 cup of water and 1 cup of sugar. Bring to a boil, stirring frequently. Meanwhile, juice 4 to 6 lemons depending on size to yield 1 cup of juice. You can microwave the lemons on high for 30 seconds, then roll them on the counter before slicing and juicing to make the juice come out easier. You can also set them out to come to room temperature. Combine sugar syrup, lemon juice and 3 cups of cold water. Adjust lemon juice to taste. Makes enough for 8 serving over ice. Recipe may be increased as needed. Enjoy!

Milk Substitutes

Instead of milk you can use water in most recipes.   You can also use rice milk, soy milk, oat milk, nut milk, and goat milk.  You can buy all these atmost grocery stores now.  You can also make your own rice milk, soy milk, nut milk and oat milk.  To make your own oat milk soak 3/4 - 1 cup of uncooked, flaked oats with 1 cup of water.  Soak for several hours to soften or cook.  Put this mixture in a blender adding 4 cups of water.  Also if desired, add 1 teaspoon of vanilla,  3 Tablespoons of honey, and a pinch of salt.  Blend all of this in on high for 1-2 minutes until oats are well blended.  The oats will not totally disappear.  Now, pour the mixture through a seive into a container.  You will have to stop and mash the mixutre releasing the “milk” and dump out the oat solids to continue.  Now you can use the oat milk as a substitute for milk in a recipe.  This works particularly well for a pudding recipe.  You can use the same recipe substituting cooked rice for rice milk.

The Beginning

My name is Julie Anschutz. I have been on the make-it-yourself, healthier eating adventure for about 19 years. I have been married for 28 years and have two grown sons. My oldest son tested allergic when he was 5 years old to peanuts, eggs, milk, beans, peas, all pollens, even lettuce and he had asthma. This is what started us on our quest to find alternative things to eat.

We began using fresh ground whole wheat when a friend of mine told me about the benefits of it and how it might help my problems of constipation and severe cramps that I had gone to doctors for, but without success. We began using fresh ground flour for breads of all kinds including noodles and crackers. I also stopped consuming milk, yeast, and beef. Milk caused me bloating and constipation and I felt the yeast did also.

I was just skin tested a couple of weeks ago and diagnosed with severe allergies to all pollens, trees and grasses in summer, winter, spring and fall.  I am exploring how to cope with this.  I have severe eye and mouth swelling.
Over the years I have collected many recipes that enable me to make my own foods and staple condiments which save money and have health benefits of no hidden undesirable ingredients. I wish to share these recipes and tips through this blog. I welcome your response and ideas.
